Easy Breakfast Meal Prep Recipe: Matcha Overnight Oats

Overnight oats are a staple in our household. They’re easy, healthy, and make for a quick breakfast, even on the most stressful of mornings. One of the things we love most about overnight oats are the endless varieties and ways you can play around with toppings. You’ll never get bored with the all the combinations!

In this recipe, we’ve turned up the flavor profile by adding matcha (a no brainer) and just a touch of yuzu to a classic overnight oat recipe. Matcha gives the delicate flavor of the oats a bit of a kick and the yuzu adds a hint of citrusy goodness.

One of the best things about overnights is that they can be prepared up to 4 days ahead of time and left in the fridge. Overnight oats make for an easy Sunday meal prep and can then be enjoyed for the rest of the week! Our matcha overnight oats are creamy and earthy and the best way to turn those Monday blues around.

What are overnight oats?

Overnight oats are a no bake way of having delicious, creamy, and fresh oatmeal in the morning. They especially make for the perfect summer breakfast when you aren’t wanting to turn the stove on. Instead of the traditional way of making oatmeal, by cooking, you soak raw oats in milk. The milk seeps into the oats and softens them enough to eat uncooked. They really only need to soak for about 2 hours, but it’s best if you can let them sit in the fridge overnight.

Overnight oats are an easy and healthy start to your day. They only take 5 minutes of prep time and are made with simple ingredients you likely already have.

Ingredients:

  • ½ teaspoon sifted matcha
  • 1/3 cup plain whole fat Greek yogurt
  • ½ cup rolled oats
  • 2/3 cups almond milk
  • 1 tablespoons chia seeds
  • 1 teaspoon yuzu juice (optional)
  • 1 teaspoon vanilla
  • 1 tablespoon maple syrup
  • Pinch of salt

Directions:

  1. In a jar, combine all ingredients together. Stir until thoroughly combined.
  2. Cover and let sit in fridge overnight.
  3. The next morning, give everything a big stir and enjoy!

If oats seem too thick you can add a splash of milk. Option to top oats with fruit, nuts, dried fruit or even granola.
