What you’ll need:

Matcha

Use a high-quality ceremonial-grade matcha for the smoothest flavor and the most health benefits. A quality matcha helps balance the sweetness of the birthday cake flavors without tasting bitter. Just be sure to sift your matcha powder before mixing with water.

Milk

Use any milk you prefer (whole, almond, oat, coconut, soy, etc.). Whole milk makes this latte especially creamy.

Simple Syrup

Simple syrup blends more evenly into iced drinks than regular sugar. Feel free to taste and adjust as needed.

Vanilla Extract

Vanilla gives the latte its classic birthday cake flavor. Use real vanilla extract for the best flavor.

Almond Extract

A small amount of almond extract is what really creates that nostalgic Funfetti cake flavor. A little goes a long way.

Rainbow Sprinkles

Rainbow sprinkles make this drink festive and fun. Use your favorite sprinkles.

Hot Water

Use hot, but not boiling water, which can make matcha taste bitter.

Matcha Latte Recipes

Ingredients

  • 2 tsp matcha powder

  • 2 tbsp hot water

  • 1/2 cup + 2 tbsp milk of choice

  • 2 tsp simple syrup

  • 1/4 tsp vanilla extract

  • 1/8 tsp almond extract

  • 1 tbsp rainbow sprinkles

  • Ice

Directions

  1. Brush simple syrup onto the inside walls of a glass, focusing on the bottom half. Add rainbow sprinkles and rotate the glass so the sprinkles stick to the sides. Set aside.

  2. In a separate cup, stir together 1/2 cup milk, simple syrup, vanilla extract, and almond extract.

  3. Sift the matcha into a bowl or cup to prevent clumps. Add the hot water and whisk until smooth and frothy. Add the remaining 2 tablespoons of milk and whisk again until creamy.

  4. Fill the prepared glass with ice and pour in the milk mixture.

  5. Slowly pour the matcha over the milk for a layered effect. Serve immediately and enjoy.

How to Make Simple Syrup

How to make simple syrup

Simple syrup is one of the easiest ways to sweeten iced drinks because it blends well without sinking to the bottom. Feel free to adjust the amount you use as needed. You can buy simple syrup, but you can also make it really quickly at home. Here’s how:

Ingredients

  • 1/2 cup sugar

  • 1/2 cup water

Instructions

  1. Add the sugar and water to a small saucepan over medium heat.

  2. Stir until the sugar completely dissolves.

  3. Remove from heat and let cool before using.

  4. Store in an airtight container in the fridge for up to 2 weeks.

You can also experiment with flavored simple syrups by adding vanilla bean, cinnamon sticks, or even a few strawberries while simmering.

Tips & Tricks

Matcha recipes
  • Sift your matcha: Sifting helps prevent clumps and creates a smoother, creamier latte.

  • Don’t use boiling water: Very hot water can make matcha taste bitter. Aim for water around 175°F for the best flavor.

  • Use a clear glass: The sprinkle-lined glass and layered matcha effect make this drink extra fun and visually impressive.

  • Taste then adjust: If you prefer a less sweet drink, reduce the simple syrup slightly. For a dessert-style latte, add an extra teaspoon.

Bottom line

Help us celebrate our 10-year anniversary with this birthday cake matcha latte. It’s playful and nostalgic, without being overly sweet. Matcha works really well with vanilla and almond, while the sprinkles make every sip feel just a little more celebratory. Whether you’re celebrating your birthday or just a random Monday, give this latte a try!
