Ultimate Iced Blueberry Matcha Latte

How to make blueberry compote: 

  1.   Add blueberries, lemon juice, sugar, and water to a small saucepan and bring to a boil. Stir often to make sure the sugar melts properly.
  2.   Remove from heat and let cool for a few minutes.
  3.   If you prefer a smoother syrup, strain through a fine mesh strainer into a large cup or bowl. You can reserve the leftover blueberries for pancakes or ice cream!
  4.   Pour compote into a serving glass before adding matcha.

Tips and Tricks:

  • Make this vegan by using a plant-based milk. Oat, almond, or cashew milk would all taste great.
  • Make the blueberry compote ahead of time and store it in a jar in the refrigerator for up to two weeks. Just be sure to let cool before pouring into glass jar. 
  • Swap blueberries out for a different fruit of choice, like strawberries or raspberries.
  • Skip the sugar for a less sweet treat.
  • Turn this into a warm drink by warming the milk and matcha and skipping the ice.

Ingredients:

1 tsp matcha powder

2 oz warm water

6 oz milk

Ice

Blueberry compote (serves 1)

½ cup fresh or frozen blueberries

1 tsp lemon juice

1 tbsp sugar

½ tbsp water

Directions:

Prepare blueberry compote:

  1.   Add all ingredients to saucepan. Heat over medium heat for about 10 minutes.
  2.   Strain mixture for a smooth blueberry syrup (optional)
  3.   Set aside to cool.

Prepare matcha:

  1.   Sift matcha powder into a bowl or mug. Top with warm water. Using a bamboo whisk, whisk in a zig-zag motion until frothy.
  2.   In a serving glass, first add blueberry compote and ice, then top with milk and matcha.
