Matcha Pie Crust Ingredients:

1 ½ cup all purpose flour

2 tbsp sugar

2 tsp matcha

½ tsp salt

½ cup cold butter

4 tbsp cold water
Pumpkin Filling Ingredients:

1 can of 15 oz pumpkin puree

1 can of 14 oz condensed milk

1 whole egg
-
3 egg yolks
-
2 tsp pumpkin spice
Directions to make your vegan matcha pumpkin pie:
Recipe for matcha pie crust:
- Sift and combine all of the dry ingredients.
- Cut in the butter until the mixture is crumbly.
- Add in the cold water then mix.
- Roll into a 12-inch circle and transfer into a 9-inch pie plate.
- Bake at 375 F for 10 minutes.
Recipe for pumpkin filling:
- Combine all ingredients and transfer into a saucepan.
- Cook the mixture until just warm.
- Sieve and transfer into a bowl pie crust.
- Bake at 345 F for 25-30 minutes.
