Matcha Dream Cake Recipe, Raw Vegan Dessert
This recipe will produce two 4" Cakes (using 10cm springform pans) or 8 Mini Cakes (medium silicon molds)

NO BAKE VEGAN CRUST
- 1/2cup Macadamia Nuts or Almonds (raw & unsalted)
- 1/2cup Cashews (raw and unsalted)
- 4tbsp Shredded Coconut
- 2tbsp maple syrup
- 1/2tsp Himalayan Salt
Use a food processor to break down the nuts, but not so much they lose their texture. Then, add remaining ingredients and finish to process a smooth consistency.
If using the springform type pans, place plastic wrap over each of the removable lower pieces. Position them on top, and close. They'll now be easier to take out from the pans after assembling the dream cakes.
Using your fingers, take half of the crust, pressing into the bottom of each. Or, if following the 8 mini cakes, use about 1tbsp for each medium mold.
MATCHA & MINT – CREATE THE FILLING
- 1cup Cashews (soak 6hr+, rinse and drain)
- 1/4cup Fresh Mint
- 1/4cup Coconut Kefir
- 2tbsp Maple Syrup
- 2tsp Ceremonial Grade Matcha
- 1tbsp Fresh Lime Juice
- 1/4tsp Vanilla
- 1/4tsp Pink Salt
- 4tbsp Coconut Oil (melted)
With the exception of the coconut oil, place the matcha mint filling materials in a blender
Process for until smooth, or about 1-2min. Stop to scrape down as needed. Now, slowly add the melted coconut oil. Process to combine and finish.
COCONUT & LIME – CREATE THE FILLING

- 2tbsp Maple Syrup
- 2tbsp Fresh Lime Juice

PIECE IT TOGETHER: FINISH THE DREAM CAKES | RAW VEGAN CAKE
The pattern is entirely up to you. Simply layer the fillings how you please:
To achieve a similar look, always be sure to use half and half of the fillings, for each pan or mini-cake.
After assembling, freeze a minimum of 4 hours. Or best, overnight. Remove from the freezer half an hour before serving.
Tip: Since these are raw, no bake dream cakes, they are sensitive to room temperature. Although they should thaw for a little while before serving, especially in order to achieve the softer mousse texture – if left too long they will begin to melt.
