How do you make a matcha lava cake?

To make a lava cake, you intentionally undercook the cake batter to achieve its distinctive soft and gooey center. The center is typically made by combining melted chocolate and butter, creating a liquid filling that remains molten even as the outer layers of the cake set during baking.

Once the lava cake is placed in the oven, the intense heat causes the outer portion to firm up while the interior stays delightfully melted. The final result is a warm and indulgent dessert that releases a luscious flow of melted chocolate when you slice into it.

Ingredients you will need for 1 matcha molten lava cake

To make more than one molten lava cake, just multiply the ingredients accordingly.

  • 1 tbsp matcha powder
  • 5 tbsp white chocolate
  • 2 1/2 tbsp unsalted butter
  • 1/4 cup powdered/confectioner's sugar
  • 3 tbsp cake flour
  • 1 egg

Here's everything you need to know to absolutely nail making this molten matcha lava cake recipe:

Preheat your oven to 390 degrees Fahrenheit or 199 Celsius.

Start by combining white chocolate and butter in a bowl, and then melt them together in the microwave. Once everything is melted, give it a good stir and let it cool for a few minutes.

Add the egg to the cooled chocolate-butter mixture, and then stir the matcha powder, cake flour, and powdered sugar into the mixture using a rubber spatula. Make sure everything is evenly mixed together!

Coat a ramekin with butter, and then sprinkle it evenly with flour. This will prevent the cake from sticking to the ramekin as it bakes

Pour your chocolate mixture into the coated ramekin. Be sure to leave a little bit of room at the top, as the cake will rise slightly as it bakes.

Bake the cake for approximately 10 minutes, or until the edges are golden brown and the center is set. Be careful not to over bake the cake, as it will lose its gooey center!

Once your cake is done baking, remove it from the ramekin and place it onto a plate.

Using a spatula, gently glide it along the edges of the cake to release it from the sides of the ramekin. Take a dessert plate and place it upside down on top of the ramekin. With caution and wearing protective gloves as the ramekin will still be hot, firmly press the plate against the ramekin. In one smooth and swift motion, carefully flip the ramekin over so that the plate is now at the bottom and the ramekin is inverted.

It's important to maintain fluidity during this step to prevent the molten lava filling from spilling too quickly and breaking through the cake's bottom layer. Give the inverted ramekin a gentle tap to ensure the cake dislodges onto the plate. Lift the ramekin away. Sprinkle the cake with a dusting of powdered sugar and serve.
