Why matcha is great for baking with

If you’ve never used matcha powder in your baked goods, you’re missing out! Matcha is uniquely suited for baking and desserts because it’s made from finely ground whole green tea leaves, meaning you’re incorporating the entire leaf, not just an extract or infusion. This gives your desserts both flavor and functional benefits.

In sweets, matcha:

  • Balances sweetness with umami and depth

  • Adds natural color without artificial dyes

  • Holds its flavor well when mixed into fats like chocolate or butter

  • Provides antioxidants, even in small amounts

What Type of Matcha to Use

For baking and confections, culinary grade matcha is the best choice.

Culinary matcha is:

  • More robust in flavor, so it doesn’t get lost among sweet or rich ingredients

  • Cost-effective, making it ideal for recipes that use larger quantities

  • Slightly bolder, which helps balance the sweetness

Unlike ceremonial matcha, which is designed to be whisked and sipped on its own, culinary matcha shines when blended into recipes like bark, cookies, cakes, and lattes. It delivers that signature matcha taste without overpowering or wasting a delicate, higher-grade tea.
