Large deep bowl, sifter, whisk, handheld mixer or spatula, baking tray, fork, cooling rack

Ingredients

Method

  1. Preheat. Preheat the oven to 347°F.

  2. Mix the dry ingredients. Place the rolled oats and sugar in a big, deep bowl. Sift in the matcha powder to remove any clumps, then whisk until combined.

  3. Add the wet ingredients. Add the peanut butter and crack in the egg. Mix on low with a handheld mixer just until combined, or fold with a spatula.

  4. Shape. Shape about a tablespoon of dough into a ball (an ice cream scoop speeds this up).

  5. Flatten. Place the balls on a baking tray and flatten with a fork, pressing horizontally and vertically for an even surface. Repeat until the dough is used up.

  6. Bake. Bake for 10 minutes.

  7. Cool and serve. Let the cookies cool on a cooling rack, then serve with a matcha latte.
