Ingredients:

  • 1/4 cup brown sugar

  • 1 egg
  • 1 1/2 cups flour
  • 1/2 tsp baking soda

Directions: 

  1. Preheat oven to 350 degrees. In a small bowl, combine cashew butter and matcha powder.
  2. Using a stand mixer or electric beaters, beat softened butter and sugars together until creamy. Add egg and vanilla and stir just until combined. 
  3. Add flour and baking soda and mix until dough forms. Add chocolate chips and incorporate with your hands or a wooden spoon.
  4. Roll dough into 12 large balls, then flatten using the back of a spoon or your thumb. Add a big dollop of cashew butter to the center and enclose by pinching the outsides of the cookie together. Roll back into a ball.
  5. Place on an ungreased cookie sheet and back for 8-11 minutes. Be careful not to overbake- cookies should be pale and puffy.
  6. Let cool, then enjoy!
