As a matcha lover and a doughnut lover, we couldn’t particularly find the perfect matcha doughnut for me on the market, so we thought, “Why not try to make it myself? It can’t be that hard!” So we went ahead and experimented with it, and had a blast finding the perfect balance for myself in this recipe. Matcha Glazed Doughnut Ingredients:
Dough:
- 200 g bread flour
- 28 g white sugar
- 85 g milk
- 1 pc whole egg
- 4 g instant dry yeast
- 32 g unsalted butter
Matcha Glaze:
- 2 tbsp white chocolate
- 1 tbsp condensed milk
- 1 tsp butter
- 2 tsp Matcha.com Choice Culinary Grade Matcha
- 1 tbsp milk

How to prepare your doughnut dough | step-by-step directions
- Combine all dough ingredients, except for the butter.
- Knead for 5 minutes, then add the butter.
- Knead for 10 more minutes or until the dough forms a ball.
- Do the window pane test to tell if the dough is ready for proofing.
- Put the dough in a clean greased bowl and cover with a wet towel.
- Proof and let it rest in a warm place until it doubles in size.
- Release the air from the dough by punching.
- Roll and cut in to desired doughnut shape/size. Fry until golden brown.
Directions for the matcha glaze:
- Melt butter and white chocolate.
- Sift in matcha and add condensed milk.
- Mix until clumps are not visible.
- Add milk, then mix.
- Dip the fried doughnuts, and enjoy!
