Matcha desserts

Ingredients:

2 egg yolks

¼ cup water

1 tablespoon sugar

Pinch of salt

1 tablespoon butter

1 teaspoon matcha powder

3 oz white chocolate chips

½ cup whipping cream

 Directions:

  1. In a small saucepan combine egg yolks, sugar, water and salt. Whisk over medium-low heat. Cook until mixture is slightly thickened and foamy (~145-150 degrees F).
  2. Once thickened, add butter and chocolate chips and whisk until melted. Remove from heat and stir in sifted matcha powder. Let cool for a few minutes, whisking occasionally
  3. Meanwhile, whisk cream until medium stiff peaks form.
  4. Stir in about 1/3 of matcha mixture into the whipped cream, fold with a spatula until incorporated. Gently fold in remaining matcha mixture, trying to keep as much air in the mixture as possible.
  5. Transfer into 4 serving dishes, cover with plastic wrap and chill for at least 1 hour.
  6. Just before serving, crumble your favorite cookie and sprinkle on top of mousse.
