Gluten-free Matcha Mousse Cake

Matcha Cake Ingredients:

  • Yields: 1 cake (6 inches)
  • 1 egg
  • 2g matcha powder
  • 10g hot milk
  • 1/2 tbsp vegetable oil
  • 1 tbsp cornstarch

Matcha Cake Recipe:

  1. Combine hot milk and sifted matcha in a bowl. Make sure the matcha is well combined with the milk.
  2. Separate the eggs and stir in the yolk in the matcha mixture.
  3. Whisk the whites and gradually add sugar. Whip until soft peaks.
  4. Sift in cornstarch and mix until medium peaks.
  5. Add a third of the egg white mixture into the matcha mixture and gently fold.
  6. Combine the rest of the mixture until well incorporated.
  7. Transfer into a lined baking pan and spread evenly.
  8. Bake at a pre-heated oven for 8-10 minutes at 170C.

Matcha Mousse Ingredients:

  • 250g heavy cream
  • 30g sugar
  • 15g water
  • 8g matcha powder
  • 4 egg yolks
  • 145g white chocolate
  • 16g gelatin powder
  • 45g cold water

Matcha Mousse Recipe:

  1. Whip the heavy cream until soft peaks form. Let it chill in the fridge until ready to use.
  2. Bloom gelatin in cold water for 2 minutes, dissolve in water bath, keeping it warm.
  3. Melt white chocolate in water bath, and add in sifted matcha powder. Keep it warm.
  4. Mix egg yolk at high speed until light and fluffy.
  5. In a saucepan, combine sugar and water cooking on medium heat. Stir continuously until it reaches 110C.
  6. Gradually pour the hot syrup into the egg yolk while whisking at high speed.
  7. Stir in the dissolved gelatin powder.
  8. Gently blend one-third of the whipped cream into the egg yolk mixture and stir in the melted matcha white chocolate.
  9. Fold in the rest of the whipped cream until well combined.
  10. Pour in a lined pan and let it set in the fridge for 30 minutes.



GF Matcha Mousse Cake Assembly:

  1. Remove the mousse from the fridge and add the cake on top.
  2. Return it to the fridge and let it set for at least 2-3 hours.
  3. Once the mousse has set, remove from the pan and cut the sides clean.
  4. Flip it over so that the cake is on the bottom while the mousse layer is on top.
  5. Dust with matcha powder, and slice into desired sizes. Indulge and enjoy!
