Gluten-free Matcha Mousse Cake Recipe
Gluten-free Matcha Mousse Cake
Matcha Cake Ingredients:
- Yields: 1 cake (6 inches)
- 1 egg
- 2g Matcha.com matcha powder
- 10g hot milk
- 1/2 tbsp vegetable oil
- 1 tbsp cornstarch
Matcha Cake Recipe:
- Combine hot milk and sifted matcha in a bowl. Make sure the matcha is well combined with the milk.
- Separate the eggs and stir in the yolk in the matcha mixture.
- Whisk the whites and gradually add sugar. Whip until soft peaks.
- Sift in cornstarch and mix until medium peaks.
- Add a third of the egg white mixture into the matcha mixture and gently fold.
- Combine the rest of the mixture until well incorporated.
- Transfer into a lined baking pan and spread evenly.
- Bake at a pre-heated oven for 8-10 minutes at 170C.
Matcha Mousse Ingredients:
- 250g heavy cream
- 30g sugar
- 15g water
- 8g Matcha.com matcha powder
- 4 egg yolks
- 145g white chocolate
- 16g gelatin powder
- 45g cold water
Matcha Mousse Recipe:
- Whip the heavy cream until soft peaks form. Let it chill in the fridge until ready to use.
- Bloom gelatin in cold water for 2 minutes, dissolve in water bath, keeping it warm.
- Melt white chocolate in water bath, and add in sifted matcha powder. Keep it warm.
- Mix egg yolk at high speed until light and fluffy.
- In a saucepan, combine sugar and water cooking on medium heat. Stir continuously until it reaches 110C.
- Gradually pour the hot syrup into the egg yolk while whisking at high speed.
- Stir in the dissolved gelatin powder.
- Gently blend one-third of the whipped cream into the egg yolk mixture and stir in the melted matcha white chocolate.
- Fold in the rest of the whipped cream until well combined.
- Pour in a lined pan and let it set in the fridge for 30 minutes.
GF Matcha Mousse Cake Assembly:
- Remove the mousse from the fridge and add the cake on top.
- Return it to the fridge and let it set for at least 2-3 hours.
- Once the mousse has set, remove from the pan and cut the sides clean.
- Flip it over so that the cake is on the bottom while the mousse layer is on top.
- Dust with matcha powder, and slice into desired sizes. Indulge and enjoy!
